Vinification takes place separately for each variety. After careful sorting of the grapes in both the vineyard and the winery, pre-fermentation cold extraction occurs for a few hours, with light pressing of the grapes to extract only the first juice. The fermentation temperature ranges from 16°-18°C and is completed after a period of about 15 days.
Light green-yellow colour. A fresh and lively aromatic character with predominantly citrus aromas, pear aromas with pleasant acidity and a soft aftertaste of herbs and mineral notes.
It is an excellent choice for seafood, grilled fish and fried appetisers while being a pleasing accompaniment to salads and pasta. It is also delicious in combination with the lemon-cooked dishes of Greek cuisine.
