Asprokampos: Privately owned vineyard on the Stymfalia plateau using the LYRE vine training system
When the ripening reaches the desired levels for red wine, a partial harvest is carried out. Approximately one third (1/3) of the grapes from each vine are harvested. The remaining grapes are left to continue their ripening to create the Black Cone.
Destemming and pressing of the grapes, 3-4 hour extraction and fermentation, for the most part, in acacia barrels, in Strofilias cellar in Asprokampos (altitude approximately 800m), at low temperatures. Remaining in barrels for a period of approximately 4 months.
Pale pink color with high aromatic intensity and remarkable complexity. Aromas of red fruits (such as raspberry, cherry, strawberry), rose and subtle notes of basil and mint are discernible.
Taste is balanced and rich, with cool acidity, rich oiliness, body and a full palette, elements that give it a special finesse, its long-lasting fruity aftertaste is noteworthy.
A rosé that ideally accompanies light dishes of Mediterranean cuisine, pasta, white meat, seafood, sushi, salmon.
