Strofilia vineyard in Asprokampos (altitude about 820m)
Pre-fermentation extraction at low temperatures for 24-36 hours (skin contact). Alcoholic fermentation at low temperatures.
After a short static extraction at the end of the fermentation, aging in acacia barrels of first and second use, for a period of about 4 months. During maturation, battonage with its “fine” lees.
An original method of analysis of aromatic compounds of wine (Oenovation by Strofilia) has been used, in order to select the appropriate time point for the completion of the aging in the barrel, so that the aromas of the barrel are distinct, not imposed on the fruity style and contribute to the aromatic complexity.
Light golden green color. Explosive aromas of ripe exotic fruits, nuts and summer fruits, with subtle aromas of vanilla and spices. Balanced mouth, with interesting oiliness, acidity that gives freshness and a subtle sense of minerality. Mouth with exceptional complexity. Lasting, aromatic aftertaste.
Mediterranean cuisine, seafood, grilled fish and white meats with rich creamy sauces. Cool salads and pasta. It is also combined with aromatic vegetable, seafood and mushroom risotto.
